Aminopeptidase I is an enzyme that cleaves the amino-terminal end of peptides. It is used in the diagnosis and treatment of vulgare l. Aminopeptidase I has been shown to have proteolytic, aminopeptidase, and arylamidase activity. The enzyme has been found to be most active at acidic pHs and can be inhibited by disulfide bonds. It has also been shown to have inhibitory properties against blood group antigens. This protein was originally isolated from Streptomyces griseus but is present in many other organisms, such as porcine kidney, silkworm larvae, and bovine liver cells.
